For all of its history, the inhabitants of Xixona have made the most of their local products: almonds, honey, rosemary, lavender and thyme.

The family and traditional processes in Xixona have evolved to become a benchmark in the world of nougat today. The nougat industry of the people of Xixona and their descendants has set the route to follow for those who make food products in this town in Alicante.

Only authentic Jijona and Alicante nougat receive the Denomination of Origin Xixona (D.O. Xixona). Therefore, it is necessary to follow the traditional artisanal manufacturing methods which are still applied today by Sirvent:

Xixona nougat

  • Peeled almonds, roast on an open flame, sugar and honey added
  • The nougat is spread by hand and then moulded
  • Cooked a second time, moderately, and roasted and chopped almonds are added
  • Left to rest (up to 72 hours) for the oil to come out

Alacant nougat

  • Peeled almonds, roast on an open flame, add sugar and honey 
  • Egg white added to obtain a “softball” consistency (whitish tone of the mass)
  • Roasted almonds added according to the quality (Supreme) and stirred manually with shovels
  • Shaped in handmade boxes
